We went apple picking in October and I’ve been trying to make our way through the “peck” since!
This apple muffin recipe uses apple sauce to make them super moist and oats to add texture.
I managed to forget to peel the apple before dicing, which is more of a preference thing, but I would recommend peeling so your muffins don’t have pieces of apple skin!
Apple Oat Muffins

Ingredients
- 1 medium apple, peeled and diced
- 1/2 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 cup unsweetened apple sauce (2 mini snack cups)
- 1/3 cup brown sugar
- 1/2 cup melted butter (1 stick)
- 1 egg
- 1 cup rolled oats (I used Bob's Red Mill)
- 1 tsp vanilla
- 1/4 cup milk (I used almond milk)
Directions
- Step 1
- Preheat oven to 350°F. Prepare 12 cup muffin pan with liners.
- Step 2
- Peel and dice 1 medium apple into bite sized pieces.
- Step 3
- In a large mixing bowl, combine whole wheat flour, all-purpose flour, baking powder, baking soda, salt and cinnamon. Add apple pieces and apple sauce. Mix ingredients softly. Add sugar and continue to mix. Mixture should be crumbly.
- Step 4
- Scramble the egg in a small dish and add into the larger mixture along with the melted butter. Begin to mix well.
- Step 5
- Fold in oats. Add vanilla and milk and stir until completely mixed.
- Step 6
- Bake at 350°F for 20-25 minutes until a toothpick comes out clean. Remove muffins from pan and let cool. Enjoy!
