For an easy, healthy Memorial Day appetizer try this take on Cowboy Caviar! My friend Caroline made Cowboy Caviar for a tailgate and it’s been one of my favorite game day appetizers since! There are more than a few variations of the snack that exist, but I find this particular combination the easiest and full of flavor! If you’d like to portion individually, I recommend serving in the little plastic appetizer cups or the tiny shot glasses so it can grabbed on the go!
This can be prepped the night before and refrigerated, but it’s best served at room temperature.
Cowboy Caviar

Ingredients
- 1 can black-eyed peas, rinsed
- 1 can black beans, rinsed
- 1 can rotel
- 1/2 green bell pepper, diced
- 1 can white corn
- 1/4 cup scallions, diced
- 1/3 red onion, diced
- 1/4 cilantro, diced
- 1 package Zesty Italian seasoning (dry package mix)
Directions
- Step 1
- Mix beans and vegetables in large bowl.
- Step 2
- Add the Zesty Italian seasoning and mix well.
- Step 3
- Cover and let rest for at least 30 minutes before serving to allow for the flavors to mix.
